Nomi Network at Home: Sweet Sensations

Earlier this month, in preparation for our upcoming trip to Cambodia, the Nomi team hosted an intimate ‘wine and cheese’ fundraiser. As we brainstormed additional items that could be served as hors d’oeuvres, I instantly began running through all of my favorite dessert recipes in my head, trying to choose one that would be fitting for this occasion. Although key lime cupcakes, peanut butter bars and German chocolate brownies were strong contenders, these White Chocolate Chip Cranberry Oatmeal Cookies simply cannot be beat. When you're shopping for ingredients, don't forget to buy fair trade chocolate chips!

You will need the following ingredients:

  • 1 cup of butter
  • ½ cup white sugar
  • 1 cup brown sugar
  • 2 eggs
  • 2 cups whole wheat flour
  • 1 tsp. baking soda
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1 ½ tsp. vanilla
  • 1 ½ cup rolled oats
  • 1 cup fair trade white chocolate chips
  • 1 cup dried cranberries (I use craisins)

Instructions:

  1. Preheat the oven to 350
  2. Combine butter, sugar, brown sugar, and eggs in one bowl
  3. In a different bowl- mix flour, baking soda, baking powder, and salt
  4. Mix dry mixture into wet mixture
  5. Add vanilla and blend
  6. Stir in white chocolate chips and cranberries
  7. Place dough into Ziploc bag and chill for 1 hour in refrigerator
  8. Roll into small balls and place on greased cookie sheet
  9. Bake 9-10 minutes

You will soon discover that these cookies are perfect for almost any occasion- holiday parties, late night snacks, or fundraising events. Plus, these cookies not only taste wonderful, they will also make your home smell great as you bake them!
